Formulation and production costs optimization of complementary food for breast milk from red sorghum flour (sorghum bicolor l.), red bean flour (phaseolus vulgaris l.) and mungbean flour (phaseolus radiatus l.) using linear programming method

The purpose of this study is to obtain the optimal instant porridge for babies formulation using a linear programming method. research has been conducted in two stages. Preliminary aims determine characteristics raw materials use. main by determining responses studied include chemical, physical, microbiological and organoleptic responses. results show that 3 (red sorghum flour 9%, red bean 3.6% mung 5.4%) selected formula with production cost Rp. 1.319, - / 100 grams analysis including chemical response having water content 1.35%; ash 3.62%; protein 19.92%; fat 1.44%; carbohydrate 73.67%; crude fiber 1.11%. Physical rehydration time 45.8 seconds; bulk density value 0.85 g ml; absorption 3.19 g; 1.87 oil absorption. which TPC 9x102 CFU/ml Salmonella sp was not identified. fulfills highest needs 33.22%.
